Spanish dish with butter beans and chrorizo

Ingredients
  

  • 120 g Chorizo chopped
  • 3-4 rashers Smokey Bacon cut in strips
  • 1 Onion chopped
  • 2 cloves garlic finely chopped
  • 2-3 Large Tomatooes chopped
  • 1 tin Tomatoes
  • 3 tins Butter Beans
  • 2 tsp Tomato Puree
  • 1/2 glass White Wine
  • 500 ml Vegetable Stock
  • 1/2 Lemon Juice

Seasoning

  • 2 Bay Leaves
  • Paprika
  • Thyme
  • Oregano

Instructions
 

  • Cook chorizo and bacon until crispy. Remove from pan and put aside
  • Add chopped onion and garlic to the pan and cook until softened
  • Return chorizo and bacon to the pan with the onions and add all the remaining ingredients.
  • Simmer until thickened, approx. 30 minutes

Serving

  • Serve with rustic bread and Greek yoghurt to spoon on.
