Fabada
Spanish dish with butter beans and chrorizo
Ingredients
- 120 g Chorizo chopped
- 3-4 rashers Smokey Bacon cut in strips
- 1 Onion chopped
- 2 cloves garlic finely chopped
- 2-3 Large Tomatooes chopped
- 1 tin Tomatoes
- 3 tins Butter Beans
- 2 tsp Tomato Puree
- 1/2 glass White Wine
- 500 ml Vegetable Stock
- 1/2 Lemon Juice
Seasoning
- 2 Bay Leaves
- Paprika
- Thyme
- Oregano
Instructions
- Cook chorizo and bacon until crispy. Remove from pan and put aside
- Add chopped onion and garlic to the pan and cook until softened
- Return chorizo and bacon to the pan with the onions and add all the remaining ingredients.
- Simmer until thickened, approx. 30 minutes
Serving
- Serve with rustic bread and Greek yoghurt to spoon on.
